The Bengali Cutlet

I have always wanted to sink my fangs into one of those Bengali cutlets (kabiraji). I finally got my shot today. I ordered the Mutton kabiraji cutlet from the famous Regent Restaurant at Chowringhee Place. I really did not know what to expect. My colleagues at work told me to that the cutlet usually comes with a generous coating of fluffy (beaten egg) goodness. I was not disappointed when my orderIMG_7470IMG_7472IMG_7471

arrived. The cutlet is quite huge and filling. The coating, made from eggs and bread crumbs, is the highlight. It is soft, light and so, so fluffy. I could do with more of the minced mutton centre and the beaten egg coating. My order came with a generous serving of chips, too.
