Seared Scallops with Coconut & Ginger Curry
One of my favorite dishes, best with steamed rice on the side, a take on fish moilee. Good to impress as it is a beautiful looking dish. Alternate a whole fillet of fish will work well too with this recipe.
Prep time: 15 minutes
Cook time: 15 to 20 minutes
3 tablespoons oil
10 fresh curry leaves
1 onion (about 1/3 lb/ 150g), sliced
