Today’s lunch is brought to you by my pantry and a lack of grocery shopping: Jasmine Rice and Coconut Chickpea Curry.
Aren’t those sometimes the best meals?
Verdict: Delish. I ate it at my desk in my office. I also had a grilled cheese and tomato soup from the cafeteria. Don’t have a photo. Sorry.
Here’s my recipe:
Coconut Chickpea Curry
1 small onion, diced
Handful of baby carrots, chopped
2 tbsp. olive oil
2 garlic cloves, minced
1 can unsweetened coconut milk
1 can chickpeas, drained and rinsed
2-3 tbsp. red curry paste (to your taste)
salt (to your taste)
Jasmine rice, cooked (enough for two people)
Saute the onion, carrots, and olive oil together until the onions cook down, about 6 minutes. Add garlic and cook for 1 minute. Add coconut milk, chickpeas, and red curry paste. Bring to a boil…
