The last two times I had eggplant I was rather sick. I think it was excess ketosis – I’ve read that it usually happens with diabetics, and I’m certainly not diabetic (I think) so I’m not sure what happened. But I had all the symptoms. Threw up, was extremely sleepy, felt hot and shook all the time. The first time it happened I slept it off and it went away in four hours. The second time I had some sugar, and was better almost immediately after.
Now the smell of green curry makes me sick.
This is my new favourite way of eating eggplant. Fried gently in butter with curry powder and salt. Just three ingredients.
