Kheer (Indian rice pudding)

Beginning of March India welcomes the spring celebrating Holi festival. An explosion of colours! Here an homage to Indian food, the traditional kheer recipe from the Institute for Indian Mother and Child (IIMC) in Kolkata!

  • 80 gr. rice for rice pudding
  • 500 ml. milk
  • 40 gr. raisins
  • 40 gr. cashew nuts
  • six cardamom pods
  • pinch of saffron
  • one tablespoon brown sugar
  • 20 gr. pistachios

Heat the milk in a sauce pan and let it come to boil. Add the rice and cook according to recommended cooking time on a low heat. Halfway add sugar, chopped cashews, grained cardamom seeds and a pinch of saffron. Keep stirring once in a while. Towards the end add also the raisins. When the rice is cooked and the kheer has thickened, pour in four individual serving bowls. Crash pistachios into pieces and put on top. Serve chilled!
